Ajax Downtown pays homage to an Aspen icon, while blazing its own unique path with a live-fire kitchen that roars with life. Our sister restaurant, Ajax Tavern, situated at the base of Aspen Mountain in The Little Nell hotel, has been a renowned après-ski destination ever since it opened in 1994.
Come for the same lively social spirit as the beloved Aspen original set in a downtown Denver location just steps from Union Station. Trade gathering around the slopes for gathering in a high-energy, urban setting in the heart of the Mile High City.
Meticulously Crafted
Chef Jared Becker takes an earnestly personal approach to cooking—whether it’s in his live-fire kitchen or adjacent state-of-the-art dry-aging room. Using his extensive culinary expertise, Becker knows precisely which cuts are best enhanced by grilling over intense flames, slow-smoking to infuse complex notes, or searing with glowing embers to impart a subtle char.
For his signature dry-aging program, Becker sources only the finest locally raised beef, lamb and venison, slowly maturing each to exacting specifications—controlling time, temperature, and humidity— for incredible depths of flavor.
